Tasty Tuesday: Spicy Sausage Pasta

Well Friends, I'm officially overwhelmed. I did absolutely everything I could to make the transition back to "real life" after five days spent traveling and celebrating as smooth as possible, but it wasn't enough. Monday morning went exactly as well as stereotypical Monday mornings go…

Exhausted? Check.
Running late? Check.
Crying? Check.
Yelling? Check.
Child poops pants? Check.
No clean shorts? Check.
Child forgets water bottle? Check.
Cat poops in laundry? CHECK.

The list goes on.

So…instead of a putting up a regular post on Wednesday, this week I plan to put up "short-and-sweet" posts on Tuesday, Wednesday, and Thursday. And I'll still post wedding pics on Friday's "High Five" post. I hope y'all have a great week!

Tasty Tuesday: Spicy Sausage Pasta
Adaptations: I omitted the olive oil and lightly coated my pan with cooking spray instead, used a little extra garlic, used 1/4 c. heavy cream and 1/4 c. skim milk, used 1/2 c. cheddar cheese and 1/2 c. monterey jack cheese, and added all the cheese at one time (and therefore skipping broiling).
Comments: I served this dish with a tossed veggie salad and the meal really hit the spot for all four Ferri - even Hallie ate it! I LOVED that the meal required only one pan/dish (in my experience, meals billed as "one-pan/dish" often require call for taking one ingredient out of the pan when you put another  ingredient in, which means you still dirty up additional dishes), and it came together easily in less than 30 minutes. It might actually be what we end up having for dinner tonight!

And just for fun, I'll leave you with a few pics of Will and Hallie's first-ever bites of real food (if you can call rice cereal real food). Looking back, I think we should have anticipated the picky eater thing long before she pulled it on us…
